CONCENTRATION OF HEAVY METAL IONS IN ORGANS AND TISSUES OF FISH LIVING IN LAKE TURGOYAK

The quality of fish living in Lake Turgoyak is assessed for the content of ions of heavy metal compounds - cadmium, lead, arsenic and mercury. The value and quality of fish as a food product and its importance for human health are shown. The characteristic of toxic properties of heavy metal compounds is presented. The biological properties of heavy metal compounds and their physiological significance are described. The results of analyses of the content of heavy metal compounds in fish living in Lake Turgoyak – common pike (Esox lucius L.), common perch (Perca fluviatilis L.), Siberian roach (Rutilus rutilus L.), revealed a certain similarity in the distribution of heavy metal compounds in organs and tissues of all three fish species, it is shown that the most high concentrations of heavy metal compounds are characteristic of the axial skeleton, but within acceptable values. Considering that fish muscles are mainly consumed in food, it can be noted that in terms of the content of heavy metal compounds.
